WHAT IS "FREEZE DRYING" ?

Freeze-drying is a process for extracting liquid from a product. It is the most gentle way to remove water from food. 

Freeze-dried products have the advantage that they retain their shape and structure relatively unchanged from fresh condition. They absorb water again better than air-dried products and retain more of their original taste and aroma. When vacuum packed, they can last for a very long time, even without the use of preservatives.

Freeze drying is an exciting process. Water or other solvent is removed by a process called sublimation. Sublimation occurs when the ice in a frozen product is converted directly to gaseous form without passing through the liquid phase.

Freeze drying food at home is possible, but to do it right requires the use of expensive machinery which typically start a several thousand dollars.
